Väkst Restaurant: creative recycling in Copenhagen

I’m just a few days away from embarking on my long-awaited summer vacation and I plan to “return home for Christmas” as advertised by a brand of turrón nougat, albeit for summer in this case. I’ll soon be in Amsterdam for a few days to personally oversee the final details prior to the inauguration of Eric Vökel Amsterdam Suites, my new luxury suite and apartment building in the Dutch city; I have to acknowledge that I’m really excited to be back in Copenhagen—my birthplace—to reconnect with family and friends again, and discover some newly opened establishments, such as the Väkst restaurant—the latest addition to the Cofoco restaurant group.

Designed and built around the upcycling movement as a reaction against indiscriminate use and disposal, which breathes new life into items that should ostensibly disappear. This initiative promotes creative recycling, providing imaginative solutions and ideas to decorate in a distinctively unique style.

Located in a three-storey building in the Sankt Peders Stræde neighborhood of Copenhagen, Väkst was designed by Genbyg—a company specializing in upcycling—whose designers have used a great variety of different materials, recovered furniture, and items that have been given a new purpose, each with its own rich history and the unmistakable patina of age. For example, a shelf made with file boxes from the National Bank has been designed to stand behind the counter, whereas the counter itself has been built using some old Swedish scaffold platforms.

In the greenhouse, the heart of the Väskt Restaurant, it is possible to savor the freshest food made using the most delectable local ingredients, with an extraordinary ambience in an urban environment that is sustainable and respectful towards the environment right in the historic district of Copenhagen.
